List your favourite boss battle(s) and if possible, describe them!

Majoras Mask, fighting that bugger as Fierce Deity Link is awesome.
Xemmnas in Kingdom Hearts 2, that was really awesome.
Axel in Kingdom Hearts 2, for those who have played it, all the mid air acrobatics was insanely awesome.
Jhen Moran in Monster Hunter Tri. Knocking people into the sand makes for major lols.

All of the Champion battles from the Pokemon series are pretty nerve-racking the first time. Plus the music tends to get stuck in your head (and never leave).

The last boss in that Ghost Busters game for the NES. The game is pretty shitty but the last boss battle was really fun and it really shows you how a true game really is.Good times.

Boses from Persona series.
Mecha Sonic from Sonic series.
Wolf from Stronghold.
Darth Nihilus from Star Wars knights of the old republic 2.
Darth Sion from Star Wars knights of the old republic 2.
Death from Castlevania.
Bosses from Painkiller series.
Bosses from Serious Sam series.
Gardosen from Grand Chase.

And the list goes on.

I just wish the series would get back to the main storyline.

Ceadeus was a good boss, but I found him really easy to beat since I only picked up the single player quests after I had completed multiplayer (Had Lagicrus+ lol)

The Leviathan from R2 and the '' Satan Spinner '' from R3.

But in the end, definitely the Energy boss from R2.

The blue guy, razool or something like that, from the first crash bandicoot. Even though I could beat him now, when I was 6 it must have taken me 50 times.
